The most famous Korean salad is kimchi. However, that is something only Koreans can truly master, and the preparation, especially the fermentation, takes a long time. Therefore, we will make something simpler – Korean-style carrots.
What we will need:
First, you need to buy this seasoning online or at Ukrainian shops – it is commonly available there – and it’s essential. I got mine from friends in Asia. You also need to have the right julienne grater, which shreds into smooth, thin strips. Alternatively, you can cut the carrots into thin julienne strips with a knife.
Then you can get started. Buy a few kilos of large carrots, peel them, shred or cut them into thin strips, and mix them with the seasoning. Then add hot pepper or chili to taste. Everything is mixed together and tasted to see if it is seasoned correctly and has the right level of spiciness. Finally, drizzle a bit of olive oil over it.
Then pack it all into a large jar and place it in the fridge. After a few hours, it will be marinated and ready to eat. It can serve as a side dish with meat, in vegetable salads, or added to tortillas – but that is up to everyone's imagination. If you make enough, it will last you several days. If you make too little, you will eat it right away.
It will come in handy all week as a side dish for other recipes. Tomorrow we will talk about Czech-Chinese cuisine. In China, they eat everything that flies – except for airplanes, everything that swims – except for boats, and everything that moves – except for trains, cars, and motorcycles.
